This reminds me of a few videos of people using foam swords to spar. Once speed got up they used the weapons for what they were: foam swords. A real broadsword couldn't be handled that way. In that line I think the same is true for sparring with the rules and protective gear as above: people tend to shift to moving around which is best suited to the circumstances they are in. The result is that not many use their style when they start sparring like this. I see the same in san shou contests, all the fighters fight the same way, whatever style they come from.
But what do I know, hehe. I have a hard time getting sparring partners so its also hard to really experience all possibilities and limitations...
